Bitterleaf as the name implies is very bitter so you will need to get rid of the bitterness by adding enough water to the leaves and squeezing it between your palms
Bitterleafsoup also known as OfeOnugbu is a staple in my state, Amambra. So, rather than worry about who will win and the state of Nigeria, for about one hour, let’s learn to cook bitterleafsoup, eat and be merry so that when the politicians make up and start having state dinners together, we too can have a feast in our homes
remember the utazi leaf is optional, so don't bother if you don't have it. Ofe Nsala is also similar to Afia Efere, which is the Efik-style white soup, but the extra condiments added to Afia Efere is what differentiates it from Nsala
It's quite similar to Ofe Akwu (Igbo style palm nut soup) & Abak atama (Efik style palm nut soup) with the only difference being the type of spices and herbs used in preparation
The vitamins also helps in beautifying the body by increasing collagen production thereby keeping the skin firm and young-looking (Click here for the full list of Nigerian leafy vegetables and benefits)
Now, let me show you how to cook egusi soup with the Niger-delta pizzazz. The Yourubas make their egusi balls chunky, the Ibos add an array of vegetables and people from the south-south of Nigeria enjoy using fresh sea foods like shrimps, fresh fish, prawns, octopus, crabs etc
Ofe owerri is a tasty Nigerian soup which is native to Igbos from Imo State, South-eastern Nigeria especially those from owerri which is the state capital
This beautiful recipe was inspired by my cousin, Tina Joseph Kagho. When I spied a bowl of bitterleaf pepper soup she cooked, stuffed with goat meat and all the orishrishis , I couldn’t hold myself back
This is the best type of weather for one of my favorite south-southrecipes. Niger-Delta, Nigeria. It is simply a pepper soup dish which consists of unripe plantain and yam(sometimes cooked with lemon grass and potash), and is believed to be the perfect companion on a wet cold day
If you enjoyed my Ofe ugba, Ugba soup, you will also enjoy my, Fresh Okro soup, Ila (Plain Okro soup), Miyan Kuka (Baobab leafSoup, Luru Soup) and Ogbono Soup
