Egusi Soup

  • 3 Cooking spoons of palm oil
  • 2 Cups Ground Egusi
  • 2 knorr beef cubes
  • Salt
  • 2. After the meat is cooked, transfer them into another plate then add the ground egusi into the meat stock. Cook on a very low heat until the egusi starts to cake but stirring from time to time, if you want it to cake more, add more water after the first round of caking and continue cooking on low heat.
  • 3. Now add red palm oil, crayfish and pepper. Add the smoked fish also, cover and allow to simmer for some minutes.
  • 4. Add the already cooked meat and stock fish, add salt then cover and allow to simmer more.
  • 5. Add spinach or any other vegetable, cook for 1 minutes then turn off the burner.
