  • 800 g of yam, cubed
  • 5 eggs, beaten
  • 1 large green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 medium red onion, chopped
  • 2 atarodo/scotch bonnet, chopped
  • 1/2 teaspoon of curry powder
  • Pinch of dried thyme
  • 2 teaspoons of salt, divided
  • 1 tablespoon of oil, for greasing the baking dish
