Ingredients 1 cup roasted ground nuts (or 1/4 cup peanut butter) Assorted meats - boiled (cow leg, goat meat, shakki, beef, etc) 3 cups beef broth/stock 2 tablespoons palm oil 2 teaspoons ground crayfish 1/2 teaspoon ground dried pepper Few leaves of fresh spinach - chopped (optional) Salt to taste Instructions Using a small grinder or food processor, grind the groundnuts till it becomes a smooth paste (like peanut butter) Heat the stock in a small pot and add crayfish, ground pepepr and the peanut butter/groundnut paste Stir till there are no lumps. Turn heat to low and leave liquid to reduce for approximately 15-20 minutes, stirring occasionally to prevent burning Add palm oil and meats then cook for additional 5 minutes If cooking without spinach, soup is ready. If cooking with spinach, add spinach, stir and simmer for 2-3 minutes Once soup is ready, serve immediately Notes Spinach can be substituted for pumpkin leaves or bitter leaves Tatashey
