Most times Nigerian party food is served as half portion fried rice and half portion jollof rice thereby giving people options to eat the one they prefer or have the best of both world

Remove the seeds from the tatashey and green bell pepper and wash well. Curry powder. c is also great to use but for this recipe, we'd be focusing on the main protein usually used in cooking the authentic Nigerian party jollof rice using beef
Instructions Combine flour and water in a bowl to form a smooth paste and set aside In a pot on medium heat, heat the chicken broth and season with curry, chilli and thyme Add onions and cook till tender, then add the flour paste and stir till broth thickens and becomes smooth Taste for salt and adjust if necessary
Add parboiled rice with a little water (1/2 cup at a time) Cover pot, turn heat to low and cook until rice is soft Once rice is done, add sliced pumpkin leaves/spinach, mix and take off heat Serve immediately
1, Wash the rice properly and set aside2, Heat the oil and fry onion for 2 minutes3 Add the tomato purée , dry pepper and curry powder and fry till the tangy taste of the tomato turns to sweet, stirring frequently to prevent burning4, Drain the tomato juice from the fish and add to the pot and the chicken seasoning and cook for about 1 minute5, Add the washed rice and cook for about 3 minutes stirring regularly to prevent burning. Add salt to taste6, Add the water, and lower the heat for the rice to cook slowly for about 25 – 30 minutes. Or till water dries up7, Add the fish pieces to the rice when water is almost dry. 8, Serve your rice with banana or dodo if you have at home

I had no recipe in mind, but i wanted the flavours to be just as apparent, so i started adding the jollof trifecta spices (white pepper, thyme and curry powder) in teaspoonful increments, and tasting afterwards
