Place a saucepan over a low heat and add the oil, thyme and curry. As soon as the corn starts to pop, lift the saucepan off the heat slightly and give it a little shake to prevent any from burning or sticking to the bottom
Once the pepper sauce starts to show small bubbles, its time to add the catfish and snails. You will notice the sauce is very juicy, I didn’t have to add extra water, the green released it’s natural juices and since I was eating it with local rice, it was perfect
Fry with palm oil if you will use the garden egg sauce for boiled white yam or boiled plantains. In my opinion, this sauce should only be prepared with palm oil because it is more delicious
